THE OPENING OF THE VIX RESTAURANT - THE REGENT VILLAGE, GRACE BAY, PROVIDENCIALES, TURKS AND CAICOS ISLANDS

The “Heart of Grace Bay” just keeps getting better! Not only is the Regent Village a bustling hub for shops, restaurants and professional businesses but now it welcomes The Vix Restaurant and Bar.

The Vix, a Mediterranean alfresco café bar, will deliver high end modern cuisine without all the formalities of fine dining. Local and seasonal products will be used to create a classical menu with TCI flair, and the wine list has been carefully selected to include some of best wines from around the world. This, combined with a continuously changing menu using only the finest ingredients, will provide a unique dining experience.

The Vix will be a welcome addition to the luxury boutique resorts of The Regent Village Resort and Spa and the Villa Renaissance, providing dining options and room service.

Executive chef Steven Dray has a real passion for food and flavours and brings his vast culinary experience to the Turks and Caicos Islands. After completing two years of culinary school in England, Steven’s apprenticeship began at the world famous Gleneagles Hotel in Scotland. This was followed by a spell at the Four Seasons Hotel and then at the Michelin starred Capital Hotel in London, working for such highly regarded Chefs as Bruno Loubet, Rowley Leigh and Terrence Laybourne. Steven then embarked on a culinary journey which took him around the world, to Canada, France, Abu Dhabi and New Delhi in India.

“Travelling for a chef is a vital learning curve” says Steven “it completely opens your mind to how you view flavours, spices and ingredients”. “I believe that working with different cultures and nationalities makes you a more rounded cook”.

In 2004 Steven and his wife Stephanie decided the time was right to open their own restaurant, the award winning Stan’s Way house Restaurant in West Sussex, England, where they soon built up a loyal following.

“The five years we spent at Stan’s Way House just flew by. We learnt so much from running our own business and from a chef’s point of view it makes you become much less self-indulgent. It teaches you to always look from the dining room to the kitchen as opposed to the other way around!”

Visitors to the Vix can expect to savour such classic dishes as Crispy Calamari with anchovy mayonnaise, slow-roasted pork belly, white bean puree & Spanish sauce and Vanilla Crème Brulee with Roasted rhubarb & cardamom.

“Our ambition is to make the Vix restaurant a place where you can feel relaxed and at ease offering a quality product with value for money.”

The Vix Restaurant & Bar is located in The Regent Village which is a modern, attractive shopping plaza where fashion and style comes to life in a setting brimming with fountains, lush tropical foliage and serene gardens. The Regent Village is fast becoming the “hot spot” and the Heart of Grace Bay.
